People often ask what kind of kitchen equipment you need m order to be healthy. The real answer is none, and so please do not be put off when you see recipes calling for food processors, blenders or anything else. While there are a few things that you won’t be able to make if you don’t have the right equipment, most of the recipes in this book don’t call for anything special.
Food processors are different from blenders. Blenders have a fine blade and require a little liquid in order to get things going. They are great for smoothies, sauces, soups and dressings. For hummus, nut butter, energy balls and more solid recipes, I like to use a food processor. You can now get blenders that are capable of doing both types of mixing, so it is worth doing your research to find out what suits you best. Equipment is bulky and good ones can be pricey. I started off with a 2-in-l which had one base and then an interchangeable food processor/blender which was a really great, more affordable and space-saving solution while I was still getting to grips with my new way of cooking and eating. Over time I upgraded, but you should definitely shop around to find something that works best for you.
Spiralizers are great fun – I love having the option to quickly make spaghetti out of courgettes, carrots or whatever other vegetables I fancy. However, they wouldn’t be the first thing I’d rush out and buy. They aren’t expensive when you compare them to a blender or food processor, but they can be bulky and awkward to store. You can get handheld ones but their use is limited. Alternatively you can use a peeler to make ribbons instead of noodles – which works really well, too!

Superfoods
By definition, a superfood is ‘A nutrient-rich food considered to be especially beneficial for health and well-being’ (Oxford English Dictionary), and they are really having their moment. ‘Superfood’ has become a bit of a marketing buzzword but these foods do serve a useful purpose in supplementing a healthy diet. Importantly, they should complement a varied, healthy diet of nutritious foods, rather than be relied on as a substitute for fresh, whole foods.
